Gourmet cubes are obtained by spraying and freezing water onto the horizontal evaporator where ice is formed. This is the secret of both clarity and purity, and a method originally patented by Scotsman. The mineral residuals that naturally accumulate within the water reservoir are flushed out as fresh water is taken into the machine for the next batch of ice. Solid ice, no air pockets and no minerals. Ice cubes that are actually purer than the water from which they are formed.
